Viticulture Mastery by Isabel Habets
Under the skilled hands of viticulturist Isabel Habets, grapes were sourced from premium vineyards in Devon Valley, Stellenbosch Kloof, Helderberg, and Jonkershoek. The strategic placement on south and south-westerly facing slopes ensures cooler microclimates, resulting in an optimal yield of 8 to 10 tons per hectare. Moreover, these vineyards provide the perfect terroir for cultivating exceptional Cabernet Sauvignon.
Viniculture Expertise with Bonny van Niekerk
Winemaker Bonny van Niekerk took charge of the hand-harvested grapes, picked at 25° Balling in March. A meticulous 10 to 12-day skin fermentation ensued, meticulously controlled to extract maximum flavor and tannin. More than half of the wine matured in 300-liter French oak barrels, adding nuanced complexity. The remaining portion underwent maturation in stainless steel tanks with French and Hungarian oak staves, contributing to its rich flavor profile and elegant structure.
