Viticulture Mastery by Isabel Habets
Isabel sourced grapes from diverse vineyards in Stellenbosch, Stellenbosch Kloof, Devon Valley, and Somerset West. The vines, a mix of trellised, dryland, and irrigated, benefit from the cooling maritime breezes. This results in slow ripening and concentrated fruit flavours, showcasing the impact of varied growing conditions.
Viniculture Expertise with Bonny van Niekerk
Hand-harvested at the optimal 25.5° to 26.5° Balling in February, when fruit and tannins were fully ripened yet berries and skins remained firm. Vinification involved individual processing of each vineyard block, followed by 10 to 13 days of fermentation. Aging took place in a blend of 300-liter American, French, and Hungarian oak barrels (55%) and stainless steel tanks (45%).
